Ingredients

  • 1 lb chicken breasts boneless, skinless
  • 3 oz prosciutto or serrano ham 5 large slices

Lemon Rosemary Marinade

  • 1 lemon juice and zest
  • 1/4 cup olive oil
  • 1 clove garlic minced
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried rosemary

Instructions

  • Heat Grill: Set the Ninja to the grill function and the temperature to medium. Set the time to 30 minutes. 
  • Prep: Cut the chicken into 20 one-inch cubes and the prosciutto or serrano ham into 20 pieces.
  • Make Marinade: In a large bowl, whisk together the lemon juice, lemon zest, olive oil, garlic, salt, pepper and rosemary. Add the chicken. Toss to coat.
  • Wrap: Place each piece of chicken on a piece of prosciutto or serrano and wrap.
  • Skewer: Slide the wrapped chicken onto four skewers. Brush with the excess lemon sauce. 
  • Grill: Place the skewers on the grill and cook for 10 minutes (5 minutes per side). Serve.

If you have excess lemon rosemary marinade, discard it or cook it fully before using it.

To turn these into appetizers by using smaller skewers. Only add 1-2 chicken pieces per skewer and grill.

One of my favorite ways to enjoy the full size skewers is on a bed of spaghetti. Make an extra batch of the marinade and set it aside. Cook a half of a box of spaghetti, drain it, reserving 1/2 cup of the pasta water.

Return the pasta to the pot over medium heat. Toss it in the extra marinade and 1/2 cup pasta water. Cook for 3-5 minutes. Add a pat of butter, 1/4 cup grated parmesan cheese and salt to taste.

Divide the pasta onto two plates and top with two skewers.
